Abstract

Chili (Capsicum annuum L.) is a significant horticultural commodity in Indonesia, commonly sold in traditional markets where inadequate storage conditions may increase the risk of aflatoxin contamination. Aflatoxins are toxic mycotoxins produced by Aspergillus flavus and Aspergillus parasiticus. This study aimed to detect the presence of aflatoxins in chili samples from Padang City and evaluate their safety. Analysis was conducted using Immunoaffinity Column and High Performance Liquid Chromatography (HPLC). A chromatographic peak at 8.817 minutes indicated aflatoxin B1 at a concentration of 0.8155 ppb well below the 20 ppb limit set by BPOM and Codex Alimentarius. Aflatoxins B2, G1, and G2 were not detected. Despite being deemed safe, the tested chili still requires routine monitoring.

Cabai (Capsicum annuum L.) merupakan komoditas hortikultura penting di Indonesia dan sering dijual di pasar tradisional dengan kondisi penyimpanan kurang higienis, yang meningkatkan risiko kontaminasi aflatoksin. Aflatoksin merupakan mikotoksin beracun yang dihasilkan oleh Aspergillus flavus dan Aspergillus parasiticus. Penelitian ini bertujuan mendeteksi aflatoksin pada cabai dari pasar tradisional di Kota Padang serta menilai tingkat keamanannya. Analisis dilakukan dengan metode Immunoaffinity Column dan High Performance Liquid Chromatography (HPLC). Hasil menunjukkan satu puncak pada waktu retensi 8,817 menit yang mengindikasikan keberadaan aflatoksin B1 sebesar 0,8155 ppb, jauh di bawah batas maksimum 20 ppb. Aflatoksin tipe B2, G1, dan G2 tidak terdeteksi. Meskipun cabai yang diuji dinyatakan aman, tetap diperlukan pengawasan rutin.
